Forced rhubarb

Rheum is the latin name for rhubarb, it is actually a vegetable, although we treat it as a fruit. It is a rare seasonal treat as only grows in spring time. If you see forced pink rhubarb, buy it, if you don't use it immediately, slice into 1" lengths, keep the peel on, freeze in freezer bags.
