Now the holidays are finished I can sit down at my computer undisturbed and absorb the silence. I chose to work from home for many reasons, non of them earth shattering, rather mundane and probably shared by trillions of other mums in the same boat, but it definitely isn't an easy option, one has to be incredibly organised and stick to a routine, I know I do, 'pottering about ' is a luxury I cannot afford, staring out of the window into nothingness gets a sharp rebuke from my inner self with a stern reminder to 'get on'. My family assumes their needs come first on this little merry go round I travel on, and what I do comes second. I have to be organised with my food shopping as a round trip of an hour cuts into my day and disturbs my concentration badly, another problem is I look not just a mess, but a scary mess and I go out like that, although I do make a bit more of an effort to collect Pip from school, as I don't want to look like mad Mrs. Forbes, the mother of twins in my class at school, just use your imagination - I'm talking scary mad!!
I have sent you this recipe, as it really is easy, obviously as long as you have the ingredients in the house, and a pudding is a must if you have children, to me its part of the nurturing process, after all, a couple of spoonsfuls of something thick and sweet is something to look forward to and definitely not bad for you. There would be an outcry if I didn't produce a pud. This rhubarb jelly is a 10 minute wonder, and serve it with something creamy of your choice, either yoghurt , ice-cream, rice pudding or whatever takes your fancy.
I know you worry about putting on weight and are extremely careful about what you eat, but I do think it is the takeaway foods, think Costa, Starbucks with flavourings, they have MEGA calories, so be sensible and balance it all out. I think cutting out foods completely is not necessary, cutting right down on a sugary intake is much better. Uping the exercise is much better. Instead of walking the dogs, I run and walk with them, they love it and don't give a monkeys that my face is red, hair bog brush style and I am turning into mad Mrs. Forbes, I find it rather liberating actually!
